The Pikes Peak Roast, also known as the heel of round roast, has exceptional flavor, but it must be slow cooked. It is shaped like a mountain peak, with a "down slope" on one side and a more "flat" front side. The preparation of letting it sit with a dry rub combined with slow cooking will produce a roast that is sure to please.
